"Ruby" .. the fourth generation of new "red" chocolate in Dubai


After 10 years of research and development, the Swiss Bari Calibu Group, one of the world's largest cocoa producers, has launched a fourth type of chocolate in Dubai.
The new chocolate bears the name Ruby and is characterized by its red color and sour taste. It is the first significant innovation in the industry after the discovery of white chocolate in the 1930s, according to Fredrik Trombert, the Middle East's director general for the Middle East.

"There were 20,000 ingredients in the cocoa bean, but we found something specific with ruby," said Trombert. "The chocolate was black at first, but then we treated it differently to make it lighter and eventually turned into ruby ​​chocolate Red ".

Ruby was launched in Asia and Europe last year, while its launch in the UAE will be more widespread across the Middle East and will be available in Lebanon next month and Saudi Arabia a month later, Arabian Business said.

"New generations are looking for some kind of fun, people here are open to trying new things, they may not like sour taste, but you can combine ruby ​​with other flavors like mushrooms and pistachios."

He pointed out that the popularity of Ruby will increase over time to become as popular as white chocolate, although it will not exceed other varieties such as dark chocolate in sales.
